BBQ jackfruit buns with slaw

Shredded jackfruit in a sticky bbq sauce, piled into toasted buns with a crunchy red cabbage and carrot slaw. Messy to eat, and the slaw adds a cool, sharp bite.

Method

  1. Drain and rinse the jackfruit, cut away any hard core tips and squeeze the pieces dry. Dice the onion and finely chop the garlic.
  2. Warm the olive oil in a pan over a medium heat and cook the onion for 6 to 8 minutes, until soft and translucent. Stir in the garlic and smoked paprika for 1 minute.
  3. Add the jackfruit, bbq sauce and 150 ml of water and stir well. Bring to a simmer, cover and cook on a low heat for 20 minutes, until the jackfruit is soft enough to break up with a spoon.
  4. Pull the jackfruit apart in the pan with two forks. Cook uncovered over a medium heat for 5 minutes more, stirring, until the sauce is thick and sticky.
  5. While it cooks, shred the red cabbage finely and peel and grate the carrot. Mix with the vegan mayonnaise, the juice of the lime and a pinch of salt.
  6. Split the burger buns and toast the cut sides under the grill or in a dry pan. Pile in the jackfruit, top with the slaw and serve any extra slaw on the side.

Tip Buy jackfruit in water or brine, not syrup. Squeezing it properly dry is what lets the sauce cling to it.
