Method
- Line a plate or small tray with baking paper. Slit each of the dates lengthways and pull out the stone, keeping the two halves joined.
- Toast the sesame seeds in a dry frying pan over a medium heat for 2 to 3 minutes, until golden, then tip them onto a saucer.
- Put a teaspoon of peanut butter into each date, press it gently shut and set it on the paper.
- Break the dark chocolate into a small heatproof bowl and set it over a pan of barely simmering water, making sure the bowl does not touch the water. Stir for about 3 minutes, until melted.
- Use a teaspoon to drizzle the chocolate over the dates, then sprinkle over the sesame seeds and a little salt before it sets.
- Chill for 5 minutes to set the chocolate, or eat them straight away while it is still soft. Serve on a plate. They keep in the fridge for 3 days.
Tip Medjool dates are the soft, large ones that split easily. If yours are dry, soak them in hot water for a few minutes and pat them dry.
