Baked cinnamon apples with walnuts

Method

  1. Set the oven to 190°C (170°C fan). Core the apples with a corer or small knife, keeping the base intact so the filling stays in. Run a knife around the middle of each skin so they do not burst.
  2. Chop the walnuts and mix them with 1 tbsp of the maple syrup and the cinnamon.
  3. Stand the apples in a small baking dish and pack the filling into the holes. Pour 3 tbsp of water around them.
  4. Bake for 25 to 30 minutes, until the apples are soft when pierced with a knife but still hold their shape.
  5. Drizzle the remaining 1 tbsp of maple syrup over the apples and spoon the juices from the dish over them.
  6. Serve warm with a spoonful of coconut yogurt each.

Tip Use a firm eating apple such as Braeburn or Pink Lady; a Bramley collapses into fluff in the oven.
