Kale crisps with nutritional yeast

Method

  1. Set the oven to 150°C (130°C fan) and line two baking trays with baking paper.
  2. Pull the kale leaves off the tough stalks and tear them into crisp-sized pieces. Wash them, then dry very thoroughly in a tea towel, because any water makes them soggy.
  3. Massage the kale in a bowl with the olive oil and a pinch of salt until every leaf is glossy.
  4. Lay the kale over the two trays in a single layer, with the leaves not touching. Bake for 15 to 20 minutes, swapping the trays halfway, until crisp but still green.
  5. Toss the crisps in a bowl with the nutritional yeast and smoked paprika, and eat them the same day.

Tip Watch them closely in the last few minutes; kale goes from crisp to bitter and burnt quickly.
