Method
- Warm the berries in a small pan with half the maple syrup over a low heat for 5 minutes, until thawed and syrupy.
- In a wide shallow dish, whisk the gram flour, cinnamon and a pinch of salt with a little of the oat milk to a smooth paste, then whisk in the rest. The gram flour does the job the egg would.
- Cut 4 thick slices from the loaf. Slightly stale bread is best because it holds together.
- Soak the slices in the batter for 30 seconds each side, so they are wet through but not falling apart.
- Warm half the oil in a frying pan over a medium heat. Fry two slices for 3 minutes each side, until deep golden and crisp at the edges. Repeat with the rest of the oil and bread.
- Serve with the warm berries, the yogurt and the rest of the maple syrup.
Tip Slightly stale bread soaks up the batter without falling apart; fresh bread works if you dry it in a low oven first. Do not soak too long.
