Method

  1. Brush an 18 cm square dish or tin with 1 tbsp of the olive oil.
  2. In a medium pan, whisk the gram flour, smoked paprika, 1 tsp of salt and 400 ml of cold water until smooth. Set it over a medium heat and stir constantly for 5 to 6 minutes, until it becomes a very thick paste that pulls away from the sides.
  3. Scrape the paste into the oiled dish, smooth the top with a wet spoon and leave to cool and set for 30 minutes.
  4. Set the oven to 220°C (200°C fan). Pour the remaining 2 tbsp of olive oil onto a large baking tray and heat it in the oven for 5 minutes.
  5. Turn the set block out onto a board and cut it into chips about 1.5 cm wide. Toss the chips in the hot oil on the tray and spread them out.
  6. Bake for 25 minutes, turning once, until golden and crisp at the edges.
  7. Sprinkle with salt and serve hot, with the vegan mayonnaise for dipping.

Tip Make the block the day before and chill it; a cold block is firmer and easier to cut into neat chips.
