Method
- Put the berries and half the maple syrup in a small pan over a low heat. Warm for 5 minutes until thawed and juicy, then take off the heat.
- Mash one banana in a bowl until smooth, then whisk in the oat milk.
- Add the flour, baking powder and a pinch of salt and stir until just combined. A few small lumps are fine, as over-mixing makes the pancakes tough. Rest the batter for 5 minutes.
- Set a non-stick frying pan over a medium heat and wipe it with a little of the oil on kitchen paper.
- Drop in 2 tablespoons of batter for each pancake. Cook for 2 minutes, until bubbles appear on top and the edges look set, then flip and cook for 1 minute more, until golden.
- Keep the pancakes warm under a clean tea towel while you cook the rest, oiling the pan between batches. You should end up with about 8.
- Stack them and top with the warm berries, the second banana in slices and the rest of the maple syrup.
Tip Do not over-mix the batter; a few lumps are fine. Cooked pancakes freeze well, so make a double batch and reheat in a toaster.
