Tomato, basil and mozzarella skewers
Little skewers of tomato, basil and soft mozzarella with a balsamic dressing. Party food with no cooking at all: thread, drizzle, serve.
Made without gluten ingredients. If you avoid gluten strictly, check the labels on: vegan mozzarella.

Method
- If the vegan mozzarella comes in liquid, drain it, then cut it into 16 bite-sized cubes. Pick the basil leaves.
- Onto each of 8 short skewers or cocktail sticks, thread a cherry tomato, a basil leaf, a cube of mozzarella and a second tomato.
- In a small bowl, whisk the olive oil, balsamic vinegar, a pinch of salt and black pepper.
- Lay the skewers on a plate, spoon over the dressing and scatter on any basil left over.
Tip Keep the tomatoes at room temperature rather than fridge-cold; they taste sweeter.
