Golden, clustery granola with maple and cinnamon, baked in one tray and served over yogurt with sliced banana. A batch lasts two weeks in a jar.

Method

  1. Heat the oven to 160°C and line a baking tray with baking paper.
  2. Chop the nuts roughly. In a bowl, stir the maple syrup, oil and cinnamon together with a pinch of salt, then add the oats, nuts and seeds and stir until everything is coated.
  3. Spread it over the tray in an even layer and press down lightly with the back of a spoon so it bakes into clusters.
  4. Bake for 20 to 25 minutes, turning the tray round halfway through, until golden at the edges. Do not stir it.
  5. Leave to cool completely on the tray. It is soft when it comes out and crisps as it cools.
  6. Break into clusters and serve over the yogurt with the banana in slices. The rest keeps in a jar for 2 weeks.

Tip Do not stir while it bakes or cools; leaving it alone is what makes the clusters. Swap in any nuts you have, as long as they are roughly chopped.
